Ingredients
- Couscous (1 cup)
- Cherry Tomatoes (1 cup, halved)
- Cucumber (1 medium, peeled and diced)
- Red Onion (1/4, finely chopped)
- Parsley (1/4 cup, chopped)
- Lemon Juice (from 1 lemon)
- Olive Oil (2 tablespoons)
- Salt (1/2 teaspoon)
- Pepper (to taste)
Instructions
- Prepare the Couscous: Start by bringing 1 cup of water to a boil in a medium saucepan. Once boiling, add the couscous along with a pinch of salt. Give it a gentle stir, remove from heat, cover, and let it sit for about 5 minutes.
- Fluff the Couscous: After 5 minutes, uncover the couscous and fluff it with a fork.
- Chop Your Vegetables: While the couscous is chilling, dice your cucumbers, halve the cherry tomatoes, and finely chop the red onion.
- Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Taste and adjust if necessary.
- Combine and Toss: Transfer the fluffed couscous into the bowl with the chopped veggies. Drizzle the dressing over everything and sprinkle in the chopped parsley. Toss gently until well coated.
- Let It Chill: For best flavor, let the salad sit in the fridge for about 30 minutes.
- Serve and Enjoy: Once chilled, give it one last toss before serving.
