Instructions

  1. Prepare the Couscous: Start by bringing 1 cup of water to a boil in a medium saucepan. Once boiling, add the couscous along with a pinch of salt. Give it a gentle stir, remove from heat, cover, and let it sit for about 5 minutes.
  2. Fluff the Couscous: After 5 minutes, uncover the couscous and fluff it with a fork.
  3. Chop Your Vegetables: While the couscous is chilling, dice your cucumbers, halve the cherry tomatoes, and finely chop the red onion.
  4. Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Taste and adjust if necessary.
