- 8 ounces pasta (penne or rotini)
- 1 cup cottage cheese
- 1 cup Alfredo sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Toss in your chosen pasta and cook according to the package directions until al dente. Drain the pasta and set it aside, reserving a little pasta water.
- Mix the Creamy Base: In a separate bowl, combine the cottage cheese, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended. Taste and adjust the seasoning as needed.
- Combine Pasta and Sauce: Toss the cooked pasta into the creamy mixture. If it’s thick, add reserved pasta water, a tablespoon at a time, until the desired consistency is reached.
- Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or olive oil. Pour the pasta and sauce mixture into the dish, spreading it out evenly.
- Add the Cheeses: Sprinkle the mozzarella and Parmesan cheese all over the top.
- Bake Away! Slide your pasta bake into the oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish and Serve: Once it’s out of the oven, let it cool for a few minutes. Garnish with fresh parsley before serving.
