Ingredients

  • 8 ounces pasta (penne or rotini)
  • 1 cup cottage cheese
  • 1 cup Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Toss in your chosen pasta and cook according to the package directions until al dente. Drain the pasta and set it aside, reserving a little pasta water.
  2. Mix the Creamy Base: In a separate bowl, combine the cottage cheese, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended. Taste and adjust the seasoning as needed.
  3. Combine Pasta and Sauce: Toss the cooked pasta into the creamy mixture. If it’s thick, add reserved pasta water, a tablespoon at a time, until the desired consistency is reached.
  4. Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or olive oil. Pour the pasta and sauce mixture into the dish, spreading it out evenly.
  5. Add the Cheeses: Sprinkle the mozzarella and Parmesan cheese all over the top.
  6. Bake Away! Slide your pasta bake into the oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden.
  7. Garnish and Serve: Once it’s out of the oven, let it cool for a few minutes. Garnish with fresh parsley before serving.
