  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cups cooked chicken, shredded
  • 2 cups frozen mixed vegetables
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water before draining.
  2. Sauté the Aromatics: In a large skillet or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Add the carrots and celery and sauté for another 4-5 minutes until tender.
  3. Add Chicken and Vegetables: Stir in the shredded chicken and frozen mixed vegetables until heated through.
  4. Create the Sauce: Pour in the chicken broth and bring to a gentle simmer. Add thyme, salt, and pepper, then stir in the heavy cream and let it simmer for 5-7 minutes until slightly thickened.
  5. Combine Pasta and Sauce: Add the drained pasta to the skillet and toss until well-coated in sauce. Adjust consistency with reserved pasta water if needed.
  6. Finishing Touches: Taste and adjust seasoning. Sprinkle with chopped parsley and mix.
