Ingredients

- 1 lb medium to large shrimp, thawed and rinsed
- 1 lemon, juiced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 ripe avocado, diced
- 1/4 cup sliced almonds
- 4 cups mixed greens
- Salt, to taste
- Pepper, to taste
Instructions
- Thaw and rinse the shrimp in cold water, then pat dry.
- Season shrimp with olive oil, salt, pepper, and citrus juices. Marinate for 10-15 minutes.
- Heat a skillet over medium-high heat and add olive oil.
- Cook shrimp for 2-3 minutes per side until pink and opaque.
- Transfer cooked shrimp to a plate to cool.
- Add mixed greens to a salad bowl as a base.
- Scoop avocado into pieces and place on top of greens.
- Add remaining citrus segments and the cooked shrimp.
- Drizzle more olive oil and citrus juice over the salad and toss gently.
- Taste and adjust seasoning before serving.
