Ingredients

  • 1 lb medium to large shrimp, thawed and rinsed
  • 1 lemon, juiced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 ripe avocado, diced
  • 1/4 cup sliced almonds
  • 4 cups mixed greens
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Thaw and rinse the shrimp in cold water, then pat dry.
  2. Season shrimp with olive oil, salt, pepper, and citrus juices. Marinate for 10-15 minutes.
  3. Heat a skillet over medium-high heat and add olive oil.
  4. Cook shrimp for 2-3 minutes per side until pink and opaque.
  5. Transfer cooked shrimp to a plate to cool.
  6. Add mixed greens to a salad bowl as a base.
  7. Scoop avocado into pieces and place on top of greens.
  8. Add remaining citrus segments and the cooked shrimp.
  9. Drizzle more olive oil and citrus juice over the salad and toss gently.
  10. Taste and adjust seasoning before serving.
