- 1 Shallot (finely diced)
- 4 Cloves Minced Garlic
- ½ tbsp Dried Oregano
- ½ tsp Salt
- ½ tsp Pepper
- ¾ tsp Paprika
- 2 Oranges (for garnish)
- 1 Lemon
- 3 Sprigs Fresh Rosemary
- 4 Sprigs Fresh Thyme
- 1 Red Onion
Instructions
- Marinate the chicken by combining olive oil, orange juice, lemon juice, and honey in a mixing bowl. Whisk until blended and add shallots, garlic, oregano, salt, pepper, and paprika.
- Toss in chicken breasts, ensuring they are well-coated, and let them marinate.
- Preheat your oven to 400°F (200°C).
- Slice your oranges and lemon into rounds, and chop rosemary and thyme.
- Sear the chicken in a hot skillet for 4-5 minutes until golden brown.
- Flip the chicken and layer the citrus slices and herbs on top along with any leftover marinade.
- Transfer the skillet to the preheated oven and cook for 20-25 minutes until chicken reaches 165°F (75°C).
- Rest the chicken for 5-10 minutes before serving.
- Serve with extra citrus slices and fresh herbs.
