  • 2 tbsp Orange Juice
  • 1 tbsp Lemon Juice
  • 1 tsp Local Honey (optional)
  • 1 Shallot (finely diced)
  • 4 Cloves Minced Garlic
  • ½ tbsp Dried Oregano
  • ½ tsp Salt
  • ½ tsp Pepper
  • ¾ tsp Paprika
  • 2 Oranges (for garnish)
  • 1 Lemon
  • 3 Sprigs Fresh Rosemary
  • 4 Sprigs Fresh Thyme
  • 1 Red Onion

Instructions

  1. Marinate the chicken by combining olive oil, orange juice, lemon juice, and honey in a mixing bowl. Whisk until blended and add shallots, garlic, oregano, salt, pepper, and paprika.
  2. Toss in chicken breasts, ensuring they are well-coated, and let them marinate.
  3. Preheat your oven to 400°F (200°C).
  4. Slice your oranges and lemon into rounds, and chop rosemary and thyme.
  5. Sear the chicken in a hot skillet for 4-5 minutes until golden brown.
  6. Flip the chicken and layer the citrus slices and herbs on top along with any leftover marinade.
  7. Transfer the skillet to the preheated oven and cook for 20-25 minutes until chicken reaches 165°F (75°C).
  8. Rest the chicken for 5-10 minutes before serving.
  9. Serve with extra citrus slices and fresh herbs.
