Description

A delightful loaf that combines the flavors of cinnamon rolls with the creaminess of cottage cheese. Perfect for breakfast or an afternoon snack!


Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped nuts or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the cottage cheese, eggs, honey, and vanilla extract until creamy.
  3. Combine the oat flour, baking powder, cinnamon, and salt in another bowl.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Add nuts or raisins if using, and fold gently into the batter.
  6. Prepare a loaf pan by greasing it or lining it with parchment paper.
  7. Pour the batter into the pan and smooth the top.
  8. Bake for 40–45 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store leftovers wrapped in plastic wrap in the fridge for up to five days. This loaf can also be frozen for 2-3 months.
