- 1 cup cottage cheese
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup oat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup chopped nuts or raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the cottage cheese, eggs, honey, and vanilla extract until creamy.
- Combine the oat flour, baking powder, cinnamon, and salt in another bowl.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Add nuts or raisins if using, and fold gently into the batter.
- Prepare a loaf pan by greasing it or lining it with parchment paper.
- Pour the batter into the pan and smooth the top.
- Bake for 40–45 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Store leftovers wrapped in plastic wrap in the fridge for up to five days. This loaf can also be frozen for 2-3 months.
