Description

Ingredients

  • 3 ripe bananas, mashed
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (or brown sugar for richer flavor)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • Cinnamon Crunch Topping:
  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 2 tbsp cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, mash bananas and whisk in melted butter, sugar, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Fold dry ingredients into wet mixture until just combined (do not overmix).
  5. Pour batter into the prepared loaf pan.
  6. For topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Sprinkle evenly over batter.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes before transferring to a wire rack to finish cooling.

Notes

  • For extra texture, fold in ½ cup chopped walnuts or pecans.
  • If bananas aren’t ripe enough, bake them (in their peels) at 300°F for 15 minutes to soften and sweeten.
  • Store covered at room temperature for 2 days or refrigerate up to 5 days.
