- 3 ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar (or brown sugar for richer flavor)
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- Cinnamon Crunch Topping:
- ¼ cup all-purpose flour
- ¼ cup brown sugar
- 1 tsp cinnamon
- 2 tbsp cold unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, mash bananas and whisk in melted butter, sugar, eggs, and vanilla until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Fold dry ingredients into wet mixture until just combined (do not overmix).
- Pour batter into the prepared loaf pan.
- For topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Sprinkle evenly over batter.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes before transferring to a wire rack to finish cooling.
Notes
- For extra texture, fold in ½ cup chopped walnuts or pecans.
- If bananas aren’t ripe enough, bake them (in their peels) at 300°F for 15 minutes to soften and sweeten.
- Store covered at room temperature for 2 days or refrigerate up to 5 days.
