Description

Made with lean ground turkey, almond flour, and simple seasonings, they’re baked to golden perfection — perfect for meal prep, low-carb dinners, or freezer-friendly lunches that don’t skimp on flavor.


Ingredients

2 lbs ground turkey

1 egg

½ cup almond flour

Zest of 2 limes

2 tbsp lime juice

½ cup chopped fresh cilantro

2 cloves garlic, minced

1 tsp cumin

½ tsp salt

½ tsp black pepper


Instructions

Preheat oven: to 400°F (200°C). Line a baking sheet with parchment paper.

Mix ingredients: In a large bowl, combine all ingredients. Mix until just combined — don’t overwork.

Shape: Roll into 18–20 meatballs (about 2 tbsp each).

Bake: Place on baking sheet and bake for 18–20 minutes, or until golden and cooked through.

Serve or store: Enjoy hot, or cool completely before storing in the fridge or freezer.
