Instructions
- Marinate the chicken: In a bowl, mix together ¼ cup of olive oil, the juice of two limes, ¼ cup of chopped cilantro, and a generous pinch of salt and pepper. Whisk until combined. Add the chicken breasts and coat them well, then cover and let marinate for at least 30 minutes.
- Cook the chicken: Heat a grill pan or skillet over medium-high heat, add the marinated chicken, and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
- Let it rest: Transfer the chicken to a cutting board and let it rest for 5-10 minutes to redistribute juices.
- Cook the rice or greens according to package instructions, using chicken broth for rice if desired.
- Prepare the veggies: Chop your selected fresh veggies like bell peppers and avocado.
- Assemble your bowls: Start with a base of rice or greens, slice the chicken, add veggies, and finish with toppings of choice.
