Ingredients

  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil

  • 2 cups cooked rice or greens
  • 1 cup chopped fresh veggies (bell peppers, corn, avocado)
  • Optional toppings: cheese, salsa, Greek yogurt

Instructions

  1. Marinate the chicken: In a bowl, mix together ¼ cup of olive oil, the juice of two limes, ¼ cup of chopped cilantro, and a generous pinch of salt and pepper. Whisk until combined. Add the chicken breasts and coat them well, then cover and let marinate for at least 30 minutes.
  2. Cook the chicken: Heat a grill pan or skillet over medium-high heat, add the marinated chicken, and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  3. Let it rest: Transfer the chicken to a cutting board and let it rest for 5-10 minutes to redistribute juices.
  4. Cook the rice or greens according to package instructions, using chicken broth for rice if desired.
  5. Prepare the veggies: Chop your selected fresh veggies like bell peppers and avocado.
  6. Assemble your bowls: Start with a base of rice or greens, slice the chicken, add veggies, and finish with toppings of choice.

Notes

For added flavor, use chicken broth to cook rice and season greens with olive oil, salt, and pepper.
