Ingredients
Cilantro Lime Chicken Skewers:
2 chicken breasts, cubed
2 tbsp olive oil
Juice of 1 lime
¼ cup chopped cilantro
2 garlic cloves, minced
Salt & pepper
Cilantro Lime Rice:
1 cup cooked white rice
Juice of ½ lime
2 tbsp chopped cilantro

Peach Corn Avocado Salsa:
1 peach, diced
½ cup corn (fresh or frozen)
½ avocado, diced
¼ red onion, finely chopped
1 tbsp lime juice

Salt & chili flakes (optional)
Avocado Lime Crema:
½ avocado
¼ cup Greek yogurt or sour cream
Juice of 1 lime
1 tbsp olive oil
Salt to taste
Blend until smooth
Instructions
Marinate chicken in olive oil, lime juice, cilantro, garlic, salt, and pepper for at least 30 minutes. Skewer and grill or pan-sear until cooked through.
Mix rice with lime juice, cilantro, and a pinch of salt.
Toss salsa ingredients in a bowl and chill.
Blend crema ingredients until smooth and creamy.
Assemble bowl with rice, chicken skewer, salsa, and crema on the side.
