Description

Delicious cupcakes that combine the flavors of classic churros with a rich cream cheese frosting.


Ingredients

  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ¼ cups milk
  • For the Cinnamon Sugar Coating:
  • 4 tablespoons butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • For the Cream Cheese Frosting:
  • ½ cup (1 stick) butter, softened
  • 1 (8 ounce) cream cheese, softened
  • ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 5 cups confectioners’ sugar
  • 1 tablespoon milk (if desired)

Instructions

  1. Preheat Oven and Prepare Your Molds: Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Mix Dry Ingredients: Whisk together all-purpose flour, cake flour, baking powder, salt, and ground cinnamon in a medium bowl.
  3. Cream the Butter and Sugar: In a large mixing bowl, beat together the unsalted butter and granulated sugar until light and fluffy.
  4. Add Eggs and Vanilla: Add eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Alternate Adding Dry Ingredients and Milk: Gradually add the dry mixture to the butter-sugar mixture, alternating with the milk.
  6. Scoop and Bake: Fill each cupcake liner about 2/3 full and bake for 18-20 minutes, until a toothpick comes out clean.
  7. Cool Down: Let cupcakes cool in the pan for 10 minutes, then transfer them to a wire rack.
  8. Prepare the Cinnamon-Sugar Coating: Combine melted butter, sugar, and cinnamon in a small bowl. Brush the cooled cupcakes with melted butter and dip in the sugar mixture.
  9. Make the Cream Cheese Frosting: Beat softened butter and cream cheese until smooth, then add vanilla, cinnamon, and confectioners’ sugar.
  10. Frost and Enjoy: Frost the cooled cupcakes and sprinkle with additional cinnamon-sugar if desired.
