Ingredients
- Bone-in Chicken Thighs (about 4-6 pieces)
- Honey (1/3 cup)
- Chipotle Peppers in Adobo (2-3 peppers)
- Garlic (2 cloves, minced)
- Soy Sauce (2 tablespoons)
- Russet Potatoes (2 pounds)
- Butter (4 tablespoons)
- Milk or Cream (1/2 cup)
- Smoked Gouda Cheese (1 cup, grated)
- Salt and Pepper (to taste)
Instructions
- Marinade the Chicken: Combine the honey, minced chipotle peppers, soy sauce, and minced garlic in a bowl. Mix well to create a marinade.
- Prepare the Chicken Thighs: Sprinkle salt and pepper on thighs, place in a zipper bag, and pour marinade over.
- Sear the Chicken: Preheat oven to 400°F (200°C). Heat oil in skillet and add marinated chicken skin-side down.
- Transfer to the Oven: After 5-7 minutes, flip the chicken and roast for about 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Boil the Potatoes: Peel and chop russet potatoes into chunks. Place in salted water, bring to a boil, and cook until fork-tender (15-20 minutes).
- Mash the Potatoes: Drain potatoes, return to pot, add butter, milk or cream, and smoked gouda cheese. Mash until creamy and smooth.
- Serve It Up: Plate the mashed potatoes, top with chipotle honey chicken, and drizzle pan juices.
Notes
For the best flavor, marinate chicken overnight. Adjust chipotle pepper quantity for spice preference.
