Ingredients

  • 1 can of chickpeas (15 oz)
  • 1 large avocado
  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • ½ small red onion, finely diced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro)

Instructions

  1. Rinse and drain the chickpeas under cold water.
  2. Prepare the cherry tomatoes by washing and halving them, then transfer to a mixing bowl.
  3. Dice the red onion and add it to the bowl with the tomatoes.
  4. Chop and add the avocado to the mixing bowl.
  5. Crumble feta cheese over the veggies.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad, and toss gently to combine.
  8. Season to taste and add fresh herbs before serving.
  9. Transfer to a serving bowl and enjoy!
