Ingredients

- 1 can of chickpeas (15 oz)
- 1 large avocado
- 1 cup cherry tomatoes, halved
- ½ cup feta cheese, crumbled
- ½ small red onion, finely diced
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh herbs (like parsley or cilantro)
Instructions
- Rinse and drain the chickpeas under cold water.
- Prepare the cherry tomatoes by washing and halving them, then transfer to a mixing bowl.
- Dice the red onion and add it to the bowl with the tomatoes.
- Chop and add the avocado to the mixing bowl.
- Crumble feta cheese over the veggies.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad, and toss gently to combine.
- Season to taste and add fresh herbs before serving.
- Transfer to a serving bowl and enjoy!
