Ingredients

- 1 can of chickpeas (15 oz)
- 1 large avocado
- 1 cup cherry tomatoes, halved
- ½ cup feta cheese, crumbled
- ½ small red onion, finely diced
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh herbs (like parsley or cilantro)
Instructions
- Rinse and drain the chickpeas under cold water and let them drain well.
- Wash the cherry tomatoes and slice them in half, then transfer to a large mixing bowl.
- Dice the red onion and add it to the bowl with the tomatoes.
- Chop the avocado and add it to the mixing bowl.
- Crumble the feta cheese over the veggies in the bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until combined, then pour over the salad and toss gently.
- Taste and adjust seasoning as desired.
- Sprinkle fresh herbs over the salad and give it one last gentle toss.
- Transfer to a serving bowl and enjoy!
