A vibrant and refreshing salad combining chickpeas, creamy avocado, tangy feta, and fresh vegetables, perfect for any occasion.


Ingredients

  • 1 can of chickpeas (15 oz)
  • 1 large avocado
  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • ½ small red onion, finely diced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro)

Instructions

  1. Rinse and drain the chickpeas under cold water and let them drain well.
  2. Wash the cherry tomatoes and slice them in half, then transfer to a large mixing bowl.
  3. Dice the red onion and add it to the bowl with the tomatoes.
  4. Chop the avocado and add it to the mixing bowl.
  5. Crumble the feta cheese over the veggies in the bowl.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until combined, then pour over the salad and toss gently.
  7. Taste and adjust seasoning as desired.
  8. Sprinkle fresh herbs over the salad and give it one last gentle toss.
  9. Transfer to a serving bowl and enjoy!
