- 1 ½ lbs boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 medium carrots, sliced
- 2 stalks celery, chopped
- 4 medium potatoes, peeled and diced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- Salt and black pepper, to taste
- 1 cup heavy cream or half-and-half (optional, for creamy version)
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté for 5–7 minutes until softened.
- Add chicken, potatoes, chicken broth, thyme, parsley, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 25–30 minutes, until chicken is cooked through and potatoes are tender.
- Remove chicken, shred with two forks, and return to the pot.
- If making creamy soup, stir in heavy cream or half-and-half. Simmer for another 5 minutes.
- Remove bay leaf, taste, and adjust seasoning.
- Serve hot, garnished with fresh parsley.
