- 2 large boneless, skinless chicken breasts (sliced horizontally to make 4 cutlets)
- Salt and black pepper, to taste
- 1/2 cup all-purpose flour (for dredging)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup capers (rinsed and drained)
- 2 tbsp chopped parsley (for garnish)
- Optional: lemon slices for garnish
Instructions
- Season chicken cutlets with salt and pepper, then dredge lightly in flour, shaking off excess.
- In a large skillet over medium-high heat, heat olive oil and 1 tablespoon butter.
- Add chicken and cook 3–4 minutes per side until golden and cooked through. Transfer to a plate and keep warm.
- Reduce heat to medium and add remaining butter and garlic. Sauté for 30 seconds until fragrant.
- Add chicken broth, lemon juice, and capers. Simmer for 2–3 minutes, scraping up brown bits.
- Return chicken to the pan and simmer for another 2–3 minutes, spooning sauce over the top.
- Garnish with parsley and lemon slices, then serve hot with pasta, rice, or vegetables.
