- 2 boneless, skinless chicken breasts (butterflied and pounded thin)
- 1/4 cup cream cheese or goat cheese (softened)
- 1/2 cup baby spinach or arugula
- 1/4 cup roasted red peppers or sun-dried tomatoes (sliced)
- 1/4 cup shredded mozzarella or provolone cheese
- Salt and black pepper to taste
- 1/2 tsp garlic powder
- 1/2 tsp dried Italian herbs
- 1 tbsp olive oil
- Toothpicks or twine for securing
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Butterfly and pound chicken breasts to about 1/4-inch thickness.
- Season both sides with salt, pepper, garlic powder, and Italian herbs.
- Spread cream cheese over each chicken breast.
- Top with spinach, roasted red peppers, and shredded cheese.
- Roll tightly from one end and secure with toothpicks or kitchen twine.
- Slice each roll into 1-inch pinwheels and place on the baking sheet, cut side up.
- Drizzle with olive oil and bake for 18–22 minutes, until chicken is fully cooked and edges are lightly golden.
- Remove toothpicks before serving warm or at room temperature.
