Ingredients
For the Chicken:
1 lb boneless, skinless chicken thighs or breasts
2 tbsp olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 tsp dried oregano
Salt & pepper to taste
For the Bowl:
2 cups cooked rice or quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives
1/4 cup crumbled feta cheese
1/2 cup tzatziki sauce
Fresh parsley for garnish
Instructions
Marinate the chicken: Combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken for 30 minutes.
Cook the chicken: Grill or pan-sear chicken for 5–6 minutes per side until cooked through. Slice into strips.
Assemble bowls: Start with a base of rice or quinoa. Top with veggies, olives, feta, and sliced chicken. Add a dollop of tzatziki and sprinkle with fresh parsley.
