Ingredients
2 cups frozen shredded hash browns, thawed and squeezed dry
4 slices turkey bacon, cooked and chopped
1 cup shredded cheddar cheese
2 large eggs
¼ cup chopped green onions
½ teaspoon garlic powder (optional)
Salt and black pepper to taste
Instructions
Preheat oven to 400°F (205°C). Spray a mini muffin tin generously with nonstick spray or grease well.
In a large bowl, combine all ingredients: hash browns, eggs, cheese, turkey bacon, green onions, and seasonings. Mix until evenly combined.
Scoop mixture into muffin cups, pressing down slightly to compact.
Bake for 20–22 minutes, or until edges are golden and crisp.
Let cool 5 minutes before removing from tin. Serve warm or store in the fridge for later.
