Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the Oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned, about 5–7 minutes.
  3. Add onions and garlic; cook for another 3–4 minutes until translucent.
  4. Combine other ingredients in the skillet: cooked rice, cream of mushroom soup, milk or broth, 1.5 cups shredded cheese, paprika, salt, and pepper.
  5. Transfer to a greased casserole dish, spreading evenly.
  6. Top with remaining 0.5 cup of shredded cheese.
  7. Bake for 25–30 minutes until bubbly and golden.
  8. Serve it up after letting it cool for 5-10 minutes.

Notes

This casserole can be prepared ahead of time and is freezer-friendly.
