Ingredients
1 tbsp cooking oil
1 lb Italian sausage
1 small yellow onion, diced
2 garlic cloves, minced
½ tsp salt
½ tsp garlic powder
½ tsp dried oregano
¼ tsp black pepper
1½ cups marinara sauce
1 cup chicken broth
10 oz refrigerated cheese tortellini
2 cups fresh spinach
½ cup shredded mozzarella cheese
Instructions
Heat oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into crumbles.
Add onion and sauté until translucent. Stir in garlic and cook for 1 minute.
Season with salt, garlic powder, oregano, and pepper.
Pour in marinara sauce and chicken broth. Bring to a simmer.
Stir in tortellini, cover, and simmer for 5–7 minutes until pasta is tender.
Add spinach and stir until wilted.
Sprinkle with mozzarella, cover for 2–3 minutes until melted. Serve hot!
