- 1 lb Ground Beef
- 1 Medium Onion, chopped
- 3 cloves Garlic, minced
- 1 can Black Beans, drained and rinsed
- 1 cup Corn, frozen or fresh
- 1 can Diced Tomatoes, with juices
- 2 cups Cheddar Cheese, shredded
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- Salt & Pepper, to taste
- 2 cups Tortilla Chips, crushed
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium-high heat for about 5-7 minutes, draining excess fat.
- Add the chopped onion and minced garlic; cook for 5 minutes until onions are translucent.
- Toss in black beans, corn, and diced tomatoes with spices; let simmer for another 5 minutes.
- Layer half of the crushed tortilla chips in a greased 9×13-inch dish, followed by half of the beef mixture and 1 cup of cheese. Repeat layers.
- Bake covered with foil for 25 minutes, then uncover and bake for an additional 10-15 minutes until cheese is golden.
Notes
Allow the casserole to rest for 5-10 minutes before serving. Garnish with sour cream, cilantro, or avocado for added flavor.
