Ingredients
10 cups plain popped popcorn (about 1/2 cup kernels)
1/2 cup dried apple pieces, chopped
1/2 cup unsalted butter
1/2 cup light corn syrup
1 cup brown sugar
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp vanilla extract
Instructions
Place popcorn and chopped dried apples in a large mixing bowl. Set aside.
In a saucepan over medium heat, melt butter, then stir in corn syrup, brown sugar, salt, and cinnamon.
Bring to a gentle boil, stirring constantly, and let simmer for 3–4 minutes until slightly thickened.
Remove from heat and stir in vanilla.
Carefully pour caramel over the popcorn mixture, tossing gently to coat everything evenly.
Let cool slightly, then butter your hands and shape mixture into 3-inch balls.
Set on wax paper to cool completely. Wrap individually if storing or gifting.
