- 1 large head of broccoli, chopped
- 1 cup cooked bacon, crumbled
- 1 cup cheddar cheese, shredded
- 1/2 cup red onion, chopped
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- Prep your broccoli by rinsing it under cold water, trimming the ends, and chopping it into bite-sized florets.
- Cook the bacon in a large skillet over medium heat for about 5-7 minutes until crispy. Transfer to a plate lined with paper towels.
- Make the dressing by whisking together the mayonnaise, apple cider vinegar, and sugar in a mixing bowl.
- Combine the broccoli, crumbled bacon, shredded cheddar, and chopped red onion in a large bowl. Pour the dressing over and mix gently.
- Let the salad chill in the fridge for at least 30 minutes before serving.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. The salad can be made a day in advance—add bacon just before serving to keep it crispy.
