  • 12 cloves Garlic (minced)
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and bell peppers; sauté for 3–4 minutes until slightly softened.
  3. Add breakfast sausage to the skillet. Cook, breaking it up with a spoon, until browned and cooked through (about 6–8 minutes).
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Reduce heat to medium‑low. Whisk the eggs in a bowl with salt and pepper.
  6. Pour the eggs into the sausage and veggie mixture and gently stir until scrambled and fully cooked.
  7. Add chopped spinach or kale and cook another 1–2 minutes until wilted and combined.
  8. Remove from heat and divide into bowls. Add optional toppings like shredded cheese, avocado, or salsa.
