1 tbsp butter
Salt & pepper to taste
¼ cup shredded cheddar cheese
3 tbsp fresh salsa
½ avocado, cubed (optional)
Instructions
Melt butter in a non-stick skillet over medium heat.
Crack eggs into a bowl, whisk, and season with salt and pepper.
Scramble eggs in skillet until soft and fluffy.
Transfer to a bowl and top with shredded cheddar while hot.
Add salsa and avocado chunks on top. Serve warm.
