Ingredients

- 2 cups mixed salad greens
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios
- 1/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the salad base by washing your mixed salad greens under cold water. Pat them dry gently and add to a large bowl.
- Add the blueberries to the bowl of greens and gently toss them in.
- Toss in the shelled pistachios for added crunch.
- Crumble the feta cheese over the salad, distributing it evenly.
- Slice the red onion thinly and sprinkle over the salad.
- In a separate bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
- Drizzle the dressing over the salad and toss gently to coat.
- Plate the salad in a serving dish and add extra blueberries and pistachios on top for garnish.
Notes
