A light and bright salad bursting with fresh blueberries, crunchy pistachios, and creamy feta cheese, drizzled with honey-balsamic dressing.


Ingredients

  • 2 cups mixed salad greens
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the salad base by washing your mixed salad greens under cold water. Pat them dry gently and add to a large bowl.
  2. Add the blueberries to the bowl of greens and gently toss them in.
  3. Toss in the shelled pistachios for added crunch.
  4. Crumble the feta cheese over the salad, distributing it evenly.
  5. Slice the red onion thinly and sprinkle over the salad.
  6. In a separate bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
  7. Drizzle the dressing over the salad and toss gently to coat.
  8. Plate the salad in a serving dish and add extra blueberries and pistachios on top for garnish.
