Ingredients

¾ cup frozen blueberries (no need to thaw)

2 cups creamy non-dairy milk (almond, oat, cashew, etc.)

1 tbsp maple syrup (plus more to taste)

1 tsp vanilla extract

Juice of ½ small lemon

¼ tsp kosher salt

2 cups rolled oats (gluten-free if needed)

2 tbsp chia seeds or ground flaxseed

Optional: ¼ tsp cinnamon or cardamom

Toppings (optional but delicious):

Extra blueberries

Pumpkin seeds or hemp hearts

Nut butter drizzle


Instructions

In a large bowl or container, stir together milk, maple syrup, vanilla, lemon juice, and salt.

Add the oats, blueberries, chia (or flax), and any spices if using. Mix well.

Cover and refrigerate for at least 4 hours, preferably overnight.

In the morning, stir and taste—add more milk or sweetener if desired.
