- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 4 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups fresh blueberries
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar.
- Press the mixture firmly into the bottom of a greased 9-inch springform pan.
- Bake the crust for about 10 minutes.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy.
- Gradually mix in sugar and vanilla extract until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gently fold in blueberries.
- Sprinkle in cornstarch and gently fold to combine.
- Pour the cream cheese mixture onto the cooled crust and smooth the top.
- Bake for 55-70 minutes or until edges are set and center has a jiggle.
- Once baked, cool in the oven for about an hour before chilling in the fridge for at least 4 hours.
Notes
For a twist, try lemon or chocolate variations. Vegan options are also available by substituting cream cheese and eggs.
