Description

A vibrant and flavorful black bean salad packed with protein, fiber, and fresh ingredients. Perfect for any meal or gathering!


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1 cup cooked rice
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the base ingredients by rinsing and draining the black beans.
  2. Cook the rice according to package instructions.
  3. Corn time! Thaw frozen corn or prepare fresh corn.
  4. Chop your red onion and cilantro, and dice the avocado.
  5. Mix the black beans, corn, rice, red onion, and cilantro in a bowl.
  6. Dress the salad with lime juice, olive oil, salt, and pepper.
  7. Taste and adjust seasoning as needed.
  8. Serve the salad in a dish and enjoy!

Notes

This salad can be made ahead of time. Keep the avocado fresh by adding it right before serving.
