Ingredients

- 1 can black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 avocado, diced
- 1 cup cooked rice
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the base ingredients by rinsing and draining the black beans.
- Cook the rice according to package instructions.
- Corn time! Thaw frozen corn or prepare fresh corn.
- Chop your red onion and cilantro, and dice the avocado.
- Mix the black beans, corn, rice, red onion, and cilantro in a bowl.
- Dress the salad with lime juice, olive oil, salt, and pepper.
- Taste and adjust seasoning as needed.
- Serve the salad in a dish and enjoy!
Notes
This salad can be made ahead of time. Keep the avocado fresh by adding it right before serving.
