- 1 can (28 oz) Crushed Tomatoes
- 4 cups Chicken or Vegetable Broth
- 8–10 Lasagna Noodles (broken into pieces)
- 2 teaspoons Italian Seasoning
- Salt and Pepper to Taste
- 1 cup Ricotta Cheese
- 1 cup Shredded Mozzarella Cheese
- Fresh Basil (for garnish)
Instructions
- Brown the Meat: In a large pot, start by browning the ground beef (or sausage) over medium heat for about 5-7 minutes.
- Sauté Onions and Garlic: Once the meat is browned, add the chopped onion and minced garlic; sauté for 2-3 minutes until translucent.
- Add the Tomatoes and Broth: Stir in the crushed tomatoes and chicken or vegetable broth; mix to combine.
- Toss in the Noodles and Seasoning: Add the broken lasagna noodles and Italian seasoning; let simmer for 10-12 minutes until noodles are tender.
- Create the Creamy Finish: Remove from heat and stir in ricotta cheese until well incorporated.
- Serve it Up with Cheese: Ladle into bowls and sprinkle with shredded mozzarella cheese; optionally broil for extra meltiness.
