- 8 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup goat cheese, crumbled
- 1/4 cup walnuts, chopped
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Wash your mixed greens thoroughly to remove any grit.
- Slice your cucumbers and red onions thinly.
- Toast the walnuts in a small dry skillet over medium heat for about 3–5 minutes.
- Assemble the salad by combining greens, cherry tomatoes, cucumber slices, and red onions in a large bowl.
- Add the crumbled goat cheese and toasted walnuts to the top of the salad.
- Dress the salad with balsamic vinaigrette and mix gently.
- Taste and adjust seasoning with salt and pepper.
- Serve in individual bowls or on a large platter.
Notes
This salad can be prepared in advance; just keep the dressing separate until serving to maintain freshness.
