Ingredients

  • 8 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Wash your mixed greens thoroughly to remove any grit.
  2. Slice your cucumbers and red onions thinly.
  3. Toast the walnuts in a small dry skillet over medium heat for about 3–5 minutes.
  4. Assemble the salad by combining greens, cherry tomatoes, cucumber slices, and red onions in a large bowl.
  5. Add the crumbled goat cheese and toasted walnuts to the top of the salad.
  6. Dress the salad with balsamic vinaigrette and mix gently.
  7. Taste and adjust seasoning with salt and pepper.
