Berry cheesecake stuffed croissant French toast bake is a rich and fruity breakfast casserole made with buttery croissants, a creamy cheesecake filling, and bursts of fresh berries. It’s baked until golden and fluffy, perfect for brunches, holidays, or special mornings.

- 6 large croissants, torn or sliced in half
- 1 cup fresh or frozen mixed berries (blueberries, raspberries, strawberries)
- For the cheesecake filling:
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- For the custard:
- 4 large eggs
- 1 1/2 cups whole milk or half-and-half
- 1/4 cup maple syrup or sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon (optional)
- Pinch of salt
- Optional toppings: powdered sugar, maple syrup, extra berries
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Spread cheesecake mixture inside croissant halves or dollop between torn pieces.
- Arrange half the croissants in the baking dish. Sprinkle with half the berries. Repeat with remaining croissants and berries.
- In another bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon (if using), and salt.
- Pour custard evenly over croissants. Press gently to soak. Let sit for 10–15 minutes or cover and refrigerate overnight.
- Bake uncovered for 40–45 minutes, until golden and set in the center.
- Cool slightly, then top with powdered sugar or maple syrup if desired. Serve warm.

- Use day-old croissants for best texture.
- Can be prepped the night before and baked in the morning.
- Frozen berries work well—no need to thaw first.
