- 1 lb Chicken Thighs
- 1 cup Barbecue Sauce
- 1 cup Corn Chips
- 1 cup Corn Kernels
- 1/2 cup Ranch Dressing
- 4 cups Mixed Salad Greens
Instructions
- Preheat your grill or oven to 400°F.
- Marinate the chicken thighs with barbecue sauce for at least 30 minutes.
- Cook the chicken on the grill for 6-8 minutes each side or bake for 25-30 minutes.
- Let the chicken rest for 5 minutes before slicing.
- Chop mixed greens and place them in a large bowl.
- Add corn to the greens.
- Slice the rested chicken and place it on top of the salad.
- Drizzle extra barbecue sauce over the chicken.
- Top with corn chips for crunch.
- Drizzle ranch dressing over the salad and toss to combine.
