Description

A vibrant and refreshing BBQ Chicken Salad featuring juicy chicken thighs, crunchy corn chips, and a mix of fresh greens, perfect for summer cookouts.


Ingredients

  • 1 lb Chicken Thighs
  • 1 cup Barbecue Sauce
  • 1 cup Corn Chips
  • 1 cup Corn Kernels
  • 1/2 cup Ranch Dressing
  • 4 cups Mixed Salad Greens

Instructions

  1. Preheat your grill or oven to 400°F.
  2. Marinate the chicken thighs with barbecue sauce for at least 30 minutes.
  3. Cook the chicken on the grill for 6-8 minutes each side or bake for 25-30 minutes.
  4. Let the chicken rest for 5 minutes before slicing.
  5. Chop mixed greens and place them in a large bowl.
  6. Add corn to the greens.
  7. Slice the rested chicken and place it on top of the salad.
  8. Drizzle extra barbecue sauce over the chicken.
  9. Top with corn chips for crunch.
  10. Drizzle ranch dressing over the salad and toss to combine.
  11. Plate the salad in serving bowls and enjoy!
