- 1.5 cups chopped or shredded cooked chicken
- 1/4 cup BBQ sauce plus more for the dressing
- 6–8 cups sliced fresh romaine lettuce
- 1 cup cooked black beans
- 1 cup canned cooked corn
- 1 cup sliced cherry tomatoes
- 1 ripe avocado, peeled, seed removed, and diced
- 1/2 cup diced red onion
- 1/4 cup chopped scallions
- 1/4 cup chopped cashews
- 1/4 cup mayo
- 1/4 cup BBQ sauce for dressing
- 1 teaspoon fresh lime juice
- Salt and pepper to taste
Instructions
- Prepare the chicken by chopping or shredding if using leftover, or seasoning and cooking fresh chicken until done.
- Make the dressing by mixing mayo, BBQ sauce, and lime juice until smooth.
- Chop your veggies including romaine, cherry tomatoes, avocado, and red onion.
- Combine all salad ingredients in a large bowl and toss gently.
- Dress the salad with creamy BBQ dressing, adding as much as desired.
- Add chopped cashews on top for crunch.
- Serve the salad in bowls or family-style with garnish options if desired.
Notes
For a lighter version, consider using Greek yogurt instead of mayo in the dressing. This salad can be made vegetarian by omitting the chicken and adding more beans.
