Ingredients

  • 1.5 cups chopped or shredded cooked chicken
  • 1/4 cup BBQ sauce plus more for the dressing
  • 68 cups sliced fresh romaine lettuce
  • 1 cup cooked black beans
  • 1 cup canned cooked corn
  • 1 cup sliced cherry tomatoes
  • 1 ripe avocado, peeled, seed removed, and diced
  • 1/2 cup diced red onion
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cashews
  • 1/4 cup mayo
  • 1/4 cup BBQ sauce for dressing
  • 1 teaspoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by chopping or shredding if using leftover, or seasoning and cooking fresh chicken until done.
  2. Make the dressing by mixing mayo, BBQ sauce, and lime juice until smooth.
  3. Chop your veggies including romaine, cherry tomatoes, avocado, and red onion.
  4. Combine all salad ingredients in a large bowl and toss gently.
  5. Dress the salad with creamy BBQ dressing, adding as much as desired.
  6. Add chopped cashews on top for crunch.
  7. Serve the salad in bowls or family-style with garnish options if desired.

Notes

For a lighter version, consider using Greek yogurt instead of mayo in the dressing. This salad can be made vegetarian by omitting the chicken and adding more beans.
