Ingredients

- 2 ripe bananas
- 2 cups rolled oats
- 1/2 teaspoon cinnamon
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped nuts or chocolate chips (optional)
- 1/2 teaspoon baking powder (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a mixing bowl until smooth.
- Mix in the honey (or maple syrup), vanilla extract, and a pinch of salt until well combined.
- Combine the rolled oats, cinnamon, and baking powder in a separate bowl.
- Fold the dry ingredients into the wet mixture until just combined.
- Prepare an 8×8-inch baking dish with grease or parchment paper.
- Pour the mixture into the dish and spread it evenly.
- Bake for 20-25 minutes until golden brown.
- Cool the bars for about 10 minutes and then slice them into preferred shapes.
Notes
Feel free to customize with nuts, seeds, or chocolate chips. Store leftovers in an airtight container for a few days or freeze for up to three months.
