  • Salt and pepper, to taste
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 tsp onion powder
  • 1/4 tsp paprika (optional)
  • 1/4 cup chopped green onions or parsley (optional for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  2. Toss cubed potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until tender and lightly golden.
  3. While potatoes bake, steam or microwave broccoli just until crisp-tender. Drain and set aside.
  4. In a large bowl, mix sour cream, milk, 1 cup of cheddar cheese, onion powder, and paprika.
  5. Add cooked chicken, roasted potatoes, and broccoli to the cheese mixture. Stir to combine.
  6. Transfer everything to the prepared baking dish and top with remaining 1/2 cup of cheese.
  7. Bake for 15–20 minutes until cheese is melted and bubbly. Broil for 2–3 minutes for a golden top, if desired.
  8. Garnish with green onions or parsley before serving.
