Ingredients

- 2 whole shallots
- 2 heads garlic
- 2 tbsp olive oil
- 1 (8 oz) block softened cream cheese
- 1 cup sour cream
- 1 ½ cups shredded mozzarella cheese (divided)
- ½ cup grated parmesan cheese
- ½ cup fresh chopped parsley
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp red pepper flakes
Instructions
- Preheat your oven to 400°F (200°C).
- Cut off the tops of the garlic heads and trim the shallots.
- Drizzle with olive oil and wrap in foil.
- Roast in the oven for about 30-35 minutes.
- Mix softened cream cheese, sour cream, 1 cup mozzarella, parmesan, parsley, salt, pepper, and red pepper flakes in a bowl.
- Squeeze the roasted garlic cloves into the mixing bowl.
- Transfer the mixture to a 9-inch pie dish and top with remaining mozzarella.
- Bake for about 20-25 minutes or until bubbly and golden.
- Garnish with fresh parsley and serve warm.
Notes
For a fun twist, serve the dip in a hollowed-out loaf of bread.
