  • 1/2 cup crumbled feta cheese
  • 2 large eggs
  • 1/4 cup cherry tomatoes (halved)
  • 1 tbsp olive oil
  • 1/4 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley or basil (optional, for garnish)
  • Optional: red pepper flakes, garlic, or spinach for added flavor

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Drizzle olive oil into a small oven-safe skillet or baking dish.
  3. Scatter crumbled feta and cherry tomatoes evenly in the dish.
  4. Sprinkle with oregano, salt, and pepper. Add optional garlic or red pepper flakes if desired.
  5. Bake for 8–10 minutes, until the feta softens and the tomatoes begin to burst.
