Crispy on the outside, cheesy and savory on the inside—these cauliflower tots are the snack or side dish you didn’t know you needed. Inspired by classic tater tots but made clean and keto-friendly, they’re packed with flavor, not carbs. Perfect for game day, lunch boxes, or late-night cravings!
Ingredients
2 (12 oz) bags frozen cauliflower florets
1 egg*
1 cup shredded cheddar cheese
½ cup pork rind panko (or regular panko for non-keto)
¼ cup cooked, crumbled bacon
2 tbsp chopped green onions
1 tsp seasoned salt
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
Steam cauliflower until very soft. Drain and squeeze out excess water using a clean towel or cheesecloth.
In a food processor, pulse cauliflower until rice-like. Transfer to a bowl.
Add egg, cheddar, pork rind panko, bacon, green onions, and seasoned salt. Mix well.
Form mixture into small tots and place on baking sheet.
Bake 18–22 minutes, flipping halfway, until golden and crispy.
Let cool slightly and enjoy with your favorite dipping sauce!
