  • 1/2 cup (120ml) Freshly Squeezed Lemon Juice
  • 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
  • 46 cloves Garlic, minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (120ml) Vegetable or Chicken Broth
  • Fresh Parsley or Oregano, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep the potatoes by peeling and cutting them into large chunks about 1 to 1.5 inches in size.
  3. Make the flavorful marinade by combining lemon juice, olive oil, minced garlic, oregano, salt, pepper, and broth in a large bowl.
  4. Toss the potato chunks in the marinade until well-coated.
  5. Arrange the coated potatoes in a single layer on a large baking sheet.
  6. Roast in the preheated oven for about 30-35 minutes, flipping halfway through cooking.
  7. Finish with broil for the last 5 minutes for extra crispiness.
  8. Garnish with fresh parsley or oregano before serving.
