Description
Delicious Asparagus Puff Pastry Bundles filled with asparagus, Gruyère cheese, and prosciutto, all wrapped in flaky pastry.
Ingredients

- 1 bunch asparagus (about 12–16 ounces)
- 1 tablespoon extra virgin olive oil
- Kosher salt
- Pepper
- 2 sheets frozen puff pastry (thawed)
- 8 ounces Gruyère cheese (shredded)
- 12 slices prosciutto
- 1 egg (beaten)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the asparagus under cold water and trim the woody ends.
- Toss the asparagus with olive oil, kosher salt, and pepper in a mixing bowl.
- Roll out the thawed puff pastry sheets onto a lightly floured surface.
- Place a slice of prosciutto on each square of puff pastry, then add shredded Gruyère cheese and asparagus.
- Fold over the corners of the pastry to encase the filling.
- Brush the top of each bundle with the beaten egg.
- Bake for 20-25 minutes until golden brown.
- Let cool for 5 minutes before serving.
Notes
Serve warm with a dipping sauce like aioli or balsamic reduction.
