Description

Delicious Asparagus Puff Pastry Bundles filled with asparagus, Gruyère cheese, and prosciutto, all wrapped in flaky pastry.


Ingredients

  • 1 bunch asparagus (about 1216 ounces)
  • 1 tablespoon extra virgin olive oil
  • Kosher salt
  • Pepper
  • 2 sheets frozen puff pastry (thawed)
  • 8 ounces Gruyère cheese (shredded)
  • 12 slices prosciutto
  • 1 egg (beaten)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the asparagus under cold water and trim the woody ends.
  3. Toss the asparagus with olive oil, kosher salt, and pepper in a mixing bowl.
  4. Roll out the thawed puff pastry sheets onto a lightly floured surface.
  5. Place a slice of prosciutto on each square of puff pastry, then add shredded Gruyère cheese and asparagus.
  6. Fold over the corners of the pastry to encase the filling.
  7. Brush the top of each bundle with the beaten egg.
  8. Bake for 20-25 minutes until golden brown.
  9. Let cool for 5 minutes before serving.

Notes

Serve warm with a dipping sauce like aioli or balsamic reduction.
