- 1 to 2 tablespoons honey Dijon mustard (or plain Dijon mustard)
- 2 to 3 cups Gruyère cheese (freshly grated)
- 1 ½ pounds medium asparagus (trimmed)
- Fresh or frozen (defrosted) peas
- Extra virgin olive oil
- Salt and pepper
- Fresh lemon zest
- Balsamic glaze (for serving)
- Fresh pea shoots (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the puff pastry by rolling it out and placing it into a tart dish.
- Apply the honey Dijon mustard evenly over the crust.
- Add the freshly grated Gruyère cheese over the mustard-coated pastry.
- Prep the asparagus, drizzle with olive oil, and season with salt and pepper.
- Roast the asparagus for about 15 minutes until tender and caramelized.
- Assemble the tart with roasted asparagus and peas layered over the cheese.
- Bake the assembled tart for 25-30 minutes until golden brown and bubbling.
- Finishing touches include letting it sit for 5-10 minutes and zesting fresh lemon on top.
- Serve the tart drizzled with balsamic glaze and garnish with pea shoots.
Notes
This tart can be prepared ahead of time and served warm or at room temperature. It pairs well with a fresh salad or tomato soup.
