Instructions

  1. Prepare the rice noodles: Start by bringing a large pot of water to a boil. Once boiling, add your rice noodles and cook according to the package instructions (usually about 4-6 minutes). When they’re al dente, drain the noodles and rinse them under cold water to stop the cooking process.
  2. Chop the veggies: While the noodles are cooking, grab your knife and chopping board. Slice the red bell pepper, shred the cabbage, and grate the carrots.
  3. Mix the dressing: In a mixing bowl, combine the peanut butter, soy sauce, lime juice, sesame oil, and sugar. Whisk it all together until smooth.
  4. Combine everything: In a large bowl, toss together the cooled rice noodles, shredded cabbage, carrots, sliced bell pepper, and green onions. Pour over the peanut dressing and give everything a good mix.
