Description

Sweet-tart apple and cranberry filling nestled between a buttery oat crust and a golden crumble topping. Perfect for bake sales, holidays, or cozy afternoons.


Ingredients

  • 1 1/2 cups old-fashioned oats
  • 1 1/4 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup cold unsalted butter, cubed
  • 2 cups diced apples
  • 1 cup fresh or frozen cranberries
  • 1/2 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Press about two-thirds of the mixture firmly into the bottom of the prepared pan to form the crust.
  4. In another bowl, combine diced apples, cranberries, and sugar. Toss until fruit is well coated.
  5. Spread the fruit mixture evenly over the crust.
  6. Sprinkle the remaining oat mixture evenly over the fruit to form the crumble topping.
  7. Bake for 40–45 minutes, or until the topping is golden brown and the fruit is bubbly.
  8. Cool completely in the pan before lifting out and slicing into bars.

Notes

  • Use firm apples like Granny Smith or Honeycrisp for the best texture.
  • If using frozen cranberries, no need to thaw before baking.
  • Bars can be stored at room temperature for 2 days or refrigerated for up to a week.
