- 1 1/2 cups old-fashioned oats
- 1 1/4 cups all-purpose flour
- 3/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup cold unsalted butter, cubed
- 2 cups diced apples
- 1 cup fresh or frozen cranberries
- 1/2 cup sugar
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Press about two-thirds of the mixture firmly into the bottom of the prepared pan to form the crust.
- In another bowl, combine diced apples, cranberries, and sugar. Toss until fruit is well coated.
- Spread the fruit mixture evenly over the crust.
- Sprinkle the remaining oat mixture evenly over the fruit to form the crumble topping.
- Bake for 40–45 minutes, or until the topping is golden brown and the fruit is bubbly.
- Cool completely in the pan before lifting out and slicing into bars.
Notes
- Use firm apples like Granny Smith or Honeycrisp for the best texture.
- If using frozen cranberries, no need to thaw before baking.
- Bars can be stored at room temperature for 2 days or refrigerated for up to a week.
