- 4 cups Fresh Broccoli Florets
- 2 medium Apples (tart varieties like Granny Smith)
- 1/4 cup Red Onion (finely chopped)
- 1/2 cup Dried Cranberries
- 1/2 cup Chopped Walnuts
- 1/2 cup Greek Yogurt
- 2 tablespoons Honey
- 2 tablespoons Apple Cider Vinegar
- Salt and Pepper (to taste)
Instructions
- Wash and blanch the broccoli florets in boiling water for 2-3 minutes, then transfer to ice water.
- Slice the apples into thin cubes and toss with lemon juice to prevent browning.
- Whisk together the Greek yogurt, honey, and apple cider vinegar, seasoning with salt and pepper.
- In a large bowl, combine broccoli, apples, red onions, cranberries, and walnuts. Drizzle with dressing and toss gently.
- Chill in the fridge for at least 30 minutes before serving.
