Ingredients

  • 2 medium Apples (tart varieties like Granny Smith)
  • 1/4 cup Red Onion (finely chopped)
  • 1/2 cup Dried Cranberries
  • 1/2 cup Chopped Walnuts
  • 1/2 cup Greek Yogurt
  • 2 tablespoons Honey
  • 2 tablespoons Apple Cider Vinegar
  • Salt and Pepper (to taste)

Instructions

  1. Wash and blanch the broccoli florets in boiling water for 2-3 minutes, then transfer to ice water.
  2. Slice the apples into thin cubes and toss with lemon juice to prevent browning.
  3. Whisk together the Greek yogurt, honey, and apple cider vinegar, seasoning with salt and pepper.
  4. In a large bowl, combine broccoli, apples, red onions, cranberries, and walnuts. Drizzle with dressing and toss gently.
  5. Chill in the fridge for at least 30 minutes before serving.
