Description

These air fryer turkey croquettes are golden-crisp on the outside and creamy, savory on the inside—made with lean turkey, mashed potatoes, herbs, and a hint of garlic. Air-fried instead of deep-fried, they’re a healthier way to turn leftovers into something crave-worthy.


Ingredients

Scale

2 cups cooked turkey, finely chopped

1 cup mashed potatoes

1 egg

¼ cup shredded cheese (optional)

2 tbsp chopped parsley or green onion

½ tsp garlic powder

Salt and pepper to taste

¾ cup breadcrumbs (divided)

Olive oil spray


Instructions

In a bowl, mix turkey, mashed potatoes, egg, cheese, herbs, garlic powder, salt, pepper, and ¼ cup breadcrumbs until well combined.

Shape into small logs or balls and roll in remaining breadcrumbs to coat.

Lightly spray with oil and place in air fryer basket in a single layer.

Air fry at 375°F (190°C) for 10–12 minutes, flipping halfway, until golden and crispy.

Serve with dipping sauce like cranberry mustard or herbed yogurt.
