- 2 large boneless, skinless chicken breasts (sliced into thick strips or halves)
- 1/3 cup soy sauce
- 1/4 cup cane vinegar or white vinegar
- 1/2 cup water
- 4 cloves garlic (smashed)
- 2 bay leaves
- 1/2 tsp whole black peppercorns (or freshly ground)
- 1 tbsp cooking oil
- Optional: 1 tsp brown sugar for mild sweetness
- Optional garnish: chopped green onions or fried garlic
Instructions
- In a bowl or zip-top bag, combine chicken, soy sauce, vinegar, water, garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes (or up to overnight in the fridge).
- Heat oil in a skillet over medium heat. Remove chicken from marinade (reserve liquid) and sear until lightly browned on both sides, about 3–4 minutes per side.
- Pour the reserved marinade into the skillet with the chicken. Bring to a boil, then reduce to a simmer.
- Cover and simmer for 15–20 minutes, or until the chicken is fully cooked and tender.
- Remove the lid and simmer for an additional 5–7 minutes to reduce and slightly thicken the sauce.
- Serve hot over steamed rice, spooning sauce on top. Garnish as desired.
